Dark Chocolate Paleo Cookies


 
I have been in the mood for a chewy, chocolate cookie for a while. So... I experimented a bit in the kitchen this past weekend and came up with deliciousness! These guys are soft and oh so chocolatey. You are going to want to bookmark this recipe.  Even Mr. Incredible and my boys enjoyed them! This recipe made 16 cookies.

4 TBSP raw cashew butter
1 oz square 100% cacao baking chocolate, melted (make sure there is no sugar in your bar)
1 TBSP melted coconut oil
1 TBSP honey
1/2 tsp vanilla
1 egg, beaten
1 c almond flour
1/4 tsp baking soda
pinch of salt

A few of today's heroes. Let's give them a hand! Especially . . . CHOCOLATE!
Preheat oven to 350 degrees. Combine cashew butter, melted chocolate, melted coconut oil, honey, and vanilla. Add egg. Once thoroughly combined, add remaining dry ingredients until mixed well.


Roll 1 TBSP dough into balls and flatten. You can use a fork to leave a crisscross design, or you can use the bottom of a glass or measuring cup. I just LOVE stoneware for cookies. It makes the cookies practically burn-proof! You can tell my stoneware is 'well seasoned'!



Bake for 7-10 minutes. Let cool completely before sampling!

  6. These sound really really good! I've never used anything other than sweetened chocolate though and I think I'd love to use white chocolate with these. I'm not a fan of dark chocolate. These just look like yummy goodness, through and through.

  12. I don't usually enjoy dark chocolate. I have a grandma though that makes good desserts with dark chocolate. So I know it's possible but I prefer milk chocolate.
