For breakfast, I don't make anything fancy unless it is the weekend. One of my favorites to whip up on a weekend I have off is my delicious Paleo Pancakes, or even a vegetable omelet. During the week my breakfast is less photogenic, but still gives me enough energy and nutrition to make it to lunch. I usually will grab a hard boiled egg and an apple or almonds and some strawberries. If I have a bit more time I will make myself a smoothie with unsweetened coconut milk and frozen fruit. Nothing crazy, but something easy and quick!
Lunches are going to bore you. Every day for lunch I have the previous night's leftovers. I don't mind at all! If I am making dinner (which we do every night), it is no extra work to make enough for Mr. Incredible and I to take for the next day. It saves us time and money and is certainly better than anything I can run out and grab.
On to dinner! This is the highlight reel of my Paleo life. We make some epic dinners, let me tell you! Full of nutrition and colorful veggies - anyone else getting hungry? So there ya have it. Seven meal plans for a week of Paleo. Do you see anything disgusting here? Nope - me neither! No fat-free taste-free cardboard for me, either.
On to snacks. I don't feel I snack very much when I give my body what it needs, but every once in a while you need a little something. Here are some of my favorite snacks.
Seeds and nuts (not peanuts)
Dark Chocolate Cookies
High quality beef jerky, beef sticks, or lunch meat (check the ingredients)
Fruits and veggies
Olives and pickles
