Chia Seed Paleo Chocolate Mousse



I have been tying to get back onto track with my Paleo diet, and I have been doing great. Sill, I love to snack at night and carrot sticks or nuts just do not satisfy my sweet tooth.

The chia seeds give this mousse a little bit of a texture and even a bit of crunch. They also add in a boatload of fiber - 10 grams in just one ounce of seeds! In case you are wondering . .  YES! These are the same little seeds that come with Chia Pets. Weird, right?


OK so in summary yes this is good for you and yes this tastes good. It's a win-win, right? So let's make some Paleo Chocolate Mousse, shall we?

What you need:

1 can full fat coconut milk
4-5 TBSP honey (depending on how sweet you want it)
3 TBSP 100% cacao powder
1 tsp. vanilla
1/4 cup chia seeds

Combine exerything except the seeds well. I used the mixing blade on my Ninja. Lastly, gently stir in the chia seeds. Refrigerate at least 4 hours, or overnight. This makes 3-4 servings, unless you eat it all at once!

  1. Going Paleo is tough. I've tried it a few times and never could stay 100%. HOWEVER, I do try to implement more paleo-ish ways. :)

    Do you feel like you go through bananas and cauliflower like crazy on Paleo? We still use tons of cauliflower and bananas here anyway. :D

    1. I eat a lot of fruits and veggies so I don't think I favor any more than the other. I only use bananas in my pancake recipe. I don't really like bananas much but in the pancakes they are perfect!

  3. That's a lot of honey! For 4 servings that's not too much but I think I would be tempted to eat the whole thing. This looks that yummy!

    1. You can surely get by with less. I don't like my chocolate super bitter, thus the need for some sweet honey.

  7. I haven't been able to bring myself to eat chai seeds yet. I think it's the look of them and maybe the idea of the texture that freaks me out haha

  10. I've never really dared to try paleo diet. I do like chia seeds though. Usually we just put them in drinks and let them expand and drink them down.
